Our winery is a simple and functional space, designed to preserve the essence of our grapes and reflect the unique character of this very special terroir. Here, control is essential, but without major technological interventions; tradition and precision walk hand in hand, in perfect harmony.
With an extremely limited production, we focus on every detail to ensure that quality is our absolute priority. Harvest is a crucial moment, and due to our small size, we can carry it out at the precise moment, by hand, carefully selecting the bunches at their optimal point.
At Aba Solleira, we make two wines: Aba Solleira and Aba Solleira Selección Personal. The first is almost 100% Mencía, from our granite soil parcels. The second, also predominantly Mencía, has a special touch with a small blend of native varieties such as Brancellao and Merenzao, coming from the oldest vineyards grown in slate soils.
Both wines ferment in small stainless-steel tanks, with a maceration of about 10 days. The pressing is always manual, preserving the integrity of the grapes.
fter fermentation, both wines remain in contact with their lees until usually the next harvest. This natural process of stabilization also adds softness and roundness to the palate. Aba Solleira ages in a 3,500-liter French oak vat, while Aba Solleira Selección Personal ages in 500-liter French oak barrels, which adds a more delicate and elegant touch.
