On the palate, it is fresh, medium bodied, with smooth tannins and a long, elegant finish. <\/span><\/p>\n<p><span><\/span><span>* Low sulfites- less than 1\/3 of maximum legal dosage<br \/> <\/span>* Suitable for vegetarians and vegans<\/p>\n<h3>2017 Vintage characteristics<\/h3>\n<p><span>Year influenced by very benign conditions for plant productivity. Warm spring and normal rainfall that marked a great fruition that had to be regulated with green grape harvest. Normal summer in temperatures but with good rainfall that allowed a good vegetative development and a good accumulation of sugars. Fortunately, a cold and dry month of September brought a slow and very healthy maturation that allowed to wait for harvest date until the optimum. Harvest of good quality, due to the weather, more expressive towards the fruity character and with medium aging potential.<\/span><\/p>\n<h3>WHAT TO PAIR WITH ABA SOLLERIA?<\/h3>\n<p><span>It is a balanced, elegant and subtle wine, that allows for perfect pairings with many different types of cuisine, as it won\u2019t impose itself on the dish, and in turn won\u2019t be imposed by the flavors of the food either. <\/span><\/p>\n<p><span>Ideal with cured meats such as chorizo, salami, sausages and jamon. It can also stand up well to strong cheeses, ideal with Manchego, mature cheddar, or even with blue cheese such as Roquefort or Gorgonzola. <\/span><\/p>\n<p>Especially delicious with red meats such as lamb and veal, and even pork or any type of game meat. And for daring people who only consider white wine as your \u201cgo to\u201d for fish and seafood, try it with fatty and oily fish such as grilled sardines or tuna belly, or any other baked or grilled fatty fish.<\/p>\n<h3>WHAT TEMPERATURE SHOULD I SERVE THE WINE? SHOULD I USE A DECANTER?<\/h3>\n<p><span>A temperature of 14-16 C (57 to 61 F) is ideal for the wine to express its maximum flavors and aromas, although if the weather is hot and you want to drink it fresh, it\u2019s high fruit intensity allows for a chilling down to 12 \u2013 14 C (54 to 57 F) to remain a pleasant and expressive wine. <\/span><span>\u00a0<\/span><\/p>\n<p><span>It is best to open the bottle between half an hour and an hour before serving, allowing the wine to breathe, oxygenate, and show its fullness. If time is of the essence, a gentle decanting helps to accelerate this process. <\/span><\/p>\n<h3>\u00a0CAN I AGE THE WINE, OR SHOULD I DRINK IT NOW?<\/h3>\n<p>The wine has matured in the winery for 6 months with its own lees or &#8220;with its mother,&#8221; as we say in Spain, and continues to mature in the bottle. It is round and harmonious, so you can drink it now enjoying its freshness, youth and aromatic intensity. With time in the bottle it will decrease a bit in fruit intensity but gain complexity, roundness and length in the mouth. In suitable storage conditions, the wine will evolve over the next 4-5 years.<span><\/span><span>\u00a0<\/span><\/p>\n<p>For us, the process of making this wine has been a great satisfaction and we are proud it will go around the world representing us.
