Here, control is essential, but without major technological interventions; tradition and precision walk hand in hand, in perfect harmony.<\/p>\n<p>With an extremely limited production, we focus on every detail to ensure that quality is our absolute priority. Harvest is a crucial moment, and due to our small size, we can carry it out at the precise moment, by hand, carefully selecting the bunches at their optimal point.<\/p>\n<p>At Aba Solleira, we make two wines: Aba Solleira and Aba Solleira Selecci\u00f3n Personal. The first is almost 100% Menc\u00eda, from our granite soil parcels. The second, also predominantly Menc\u00eda, has a special touch with a small blend of native varieties such as Brancellao and Merenzao, coming from the oldest vineyards grown in slate soils.<\/p>\n<p>Both wines ferment in small stainless-steel tanks, with a maceration of about 10 days. The pressing is always manual, preserving the integrity of the grapes.<\/p>\n<p>fter fermentation, both wines remain in contact with their lees until usually the next harvest. This natural process of stabilization also adds softness and roundness to the palate. Emilia\u2019s family comes from the highest lands of Ribera Sacra, and we are so in love with the region that we were married in the most famous monastery there, Santo Estevo. After more than 15 years in the wine business, we decided to branch out on our own, and purchased a small winery and 4,000 square meters of vineyards in Ribera Sacra. We produce our own grapes, love taking care of the vineyards, and are passionate about making our very own wine.<\/p>\n<h4>HOW WAS ABA SOLLEIRA BORN?<\/h4>\n<p>With passion and respect. We aren\u2019t a family rich in wealth, and we didn\u2019t inherit a property nor did we reach out to investors to purchase the most beautiful winery. We used all of our life savings to make our dream come true, which was to one day have our own winery. This is an adventure we have dreamed of millions of times over, and we are passionate to create the most beautiful wine we can possibly make. We honor the history of this sacred land, and its history of winemaking going back to Romans, and even before.
